How to select pecans; To select nuts which are the best quality choose in shell nuts that have a little weight, without splits, stains or holes. The kernel should not rattle in the shell. There is no correlation between size and quality. Sampling the nutmeats themselves is the most satisfactory method for finding the variety you like best. Each variety has a subtle difference in taste and crunch. This difference is noticeable only if you are eating them alone. Pecans used in cooking are all good.

How to store pecans; Pecans are long lasting when stored properly. If they are kept cold they will maintain their freshness for 2 or more years. Placing them in freezer bags and putting them in the freezer is the best way for either shelled or in shell pecans. They can be used directly out of the freezer with very little defrost time. I have taken a handful of pecans from the freezer and ate them on my way. I have broken then into pieces to get ready for cooking very soon after removing them from the freezer.

Shelling tip. For whole pecans. For easier shelling with less breaking on the nutmeats when the pecans have been stored, Cover the pecans with warm water for 30 minutes then drain well. Then proceed to place in cracker.
